Jelly making is a fantastic way to preserve the bright summer flavors of delicate berries to enjoy through cold winter months, and to capture flavors and vitamins of a variety of poor-textured wild fruits. Our Home Food Preservation: Jellies class will walk participants through the entire process of turning fresh berries into flavorful jellies. This course is a good introduction to the basics of water bath canning & making fruit preserves. We will discuss the chemistry behind jelly making, and making jellies both with and without commercial pectin.
